Ravioli Lasagna

As a busy mom of two, sometimes, I just want a quick and easy meal for dinner. As the wife of an Italian, pasta is a staple and a regular part of our diet. This is a family favorite that is easy to prepare with ingredients that are on hand.

Ravioli Lasagna
1 jar of pasta sauce
1 package of frozen ravioli
1 1/2 c shredded mozzarella cheese

Spread 1/2 c marinara sauce in bottom of the pan. Add layers of ravioli, sauce and cheese. Repeat.

Cover with foil and bake at 400F for 30 minutes. Remove foil and cook another 5 to 10 minutes.

Or, cover and freeze. When ready to prepare from frozen, cover with foil and bake for 1 hour, remove foil and continue baking until cheese is melted, about 25 minutes more.

I tend to use a glass pan that is just smaller than 9 x 13 (7 x 10 maybe?) to get a deeper lasagna. You can mix it up by using different types of ravioli, we frequently just use regular cheese ravioli, but you can get spinach ravioli, meat ravioli, or a combination for a different experience.

I've heard about this recipe before. My friend called it "Lazy Mom's Lasagna." Sounds yummy. Thanks for sharing the recipe.
