Salsa Couscous Chicken

Today at Life As Mom the theme is Potluck. Something you can bring to a potluck or just anything goes. The recipe I selected today is one that is easy to prepare and packed with flavor. The honey and cinnamon add a nice softness to the salsa. You can use medium or hot salsa, depending on your families preference on heat.

Salsa Couscous Chicken

1 tbsp olive oil
2 cloves garlic, minced
2 chicken breasts, cut in pieces
1 c salsa
1/4 c water
1 tbsp honey
3/4 tsp cumin
1/2 tsp cinnamon

Heat oil in large skillet over medium high heat. Add garlic, cook and stir for a minute. Add chicken and cook 4 to 5 minutes, turning once. In a medium bowl, combine all remaining ingredients. Mix well. Add to chicken and mix well. Reduce heat to medium, cover and cook for 20 minutes or until chicken is fork tender.

Serve over prepared couscous (approx 3 cups - can substitute orzo or rice).
